A hearty, cheesy one-pan meal with crispy ranch-seasoned potatoes, smoky sausage, and melty cheddar. Family-friendly and perfect for busy nights.
2 lbs Yukon gold or red potatoes, diced
2 tbsp olive oil
1 packet ranch seasoning mix (or 3 tbsp homemade)
14 oz smoked sausage, sliced
1½ cups shredded cheddar cheese
Optional: chopped green onions, sour cream for garnish
Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
Toss diced potatoes with oil and ranch seasoning. Spread in dish.
Roast for 25–30 minutes, flipping once, until lightly browned.
Add sliced sausage over potatoes. Bake another 10–12 minutes.
Top with shredded cheese. Bake 5–7 minutes more, until melted.
Garnish and serve hot.
