A creamy, cheesy, ranch-flavored potato and sausage bake that’s perfect for family dinners, potlucks, or cozy nights in.
2 lbs Yukon Gold potatoes, diced
1 tbsp olive oil
1 (14 oz) smoked sausage, sliced
1 cup shredded sharp cheddar cheese
1/2 cup sour cream
2 tbsp butter
1 (1 oz) packet ranch seasoning mix
Salt and black pepper, to taste
Optional: chopped green onions or parsley for garnish
Preheat oven to 400°F (200°C). Line or grease a baking sheet.
Toss potatoes with olive oil, half the ranch mix, salt, and pepper. Roast for 25–30 minutes, flipping halfway.
In a skillet, brown sausage slices over medium-high heat until crisp. Set aside.
In a saucepan, melt butter. Add remaining ranch mix, then stir in sour cream and cheddar until melted.
Combine roasted potatoes, sausage, and cheese sauce in a bowl. Mix gently.
Transfer to a greased 9×13″ dish. Top with extra cheese if desired.
Bake for 10–15 minutes until bubbly and golden.
Garnish with green onions or parsley. Serve hot.
