Cheesy Hamburger Rice Casserole is a one-skillet, creamy, and comforting meal made with seasoned ground beef, tender rice, and melty cheddar cheese. Easy, hearty, and perfect for busy families.
1 lb ground beef
1 tbsp butter or oil
1 small onion, diced
2 garlic cloves, minced
1 cup uncooked long grain white rice
1 (10.5 oz) can cream of mushroom soup
2 cups beef broth
1½ cups shredded cheddar cheese, divided
Salt and pepper, to taste
½ tsp paprika (optional)
Chopped parsley (optional garnish)
In a large skillet, sauté onion in butter. Add beef and cook until browned. Add garlic and cook 1 more minute.
Stir in uncooked rice, cream of mushroom soup, and beef broth. Season with salt, pepper, and paprika.
Cover and simmer on low for 18–20 minutes, stirring occasionally, until rice is tender.
Stir in 1 cup cheese. Top with remaining cheese. Cover or broil until melted.
Let rest 5 minutes before serving. Garnish with parsley if desired.
