Cheesy Hamburger Rice Casserole is a warm, hearty dish made with ground beef, cooked rice, tomato sauce, and melty cheddar cheese. It’s a family-friendly, one-pan dinner that’s quick to make and easy to love.
1 lb ground beef
1 medium onion, diced
2 garlic cloves, minced
1 can (14.5 oz) diced tomatoes (undrained)
1 can (8 oz) tomato sauce or tomato soup
1 can (10.5 oz) cream of mushroom soup
2 cups cooked white or brown rice
1½–2 cups shredded cheddar cheese
½ tsp paprika
Salt and pepper to taste
Optional: parsley, bell peppers, corn, or green peas
Preheat oven to 375°F. Lightly grease a 9×13-inch casserole dish.
In a skillet, cook ground beef until browned. Add onion and sauté until soft. Stir in garlic and cook 1 minute more.
Add tomatoes, tomato sauce, paprika, salt, and pepper. Simmer for 5–7 minutes.
Stir in cooked rice and cream soup. Mix well. Optionally stir in 1 cup cheese.
Spread mixture into baking dish. Top with remaining cheese.
Bake uncovered for 20–25 minutes until hot and bubbly. Let rest before serving.
