A creamy, cheesy one-pot pasta dinner with tender chicken, melty cheese, and comforting flavor — perfect for family meals and easy weeknight cooking.
1 lb chicken breast, cubed
1 tbsp olive oil
1 small onion, diced
2–3 garlic cloves, minced
2 cups uncooked short pasta (penne, rotini, etc.)
2 cups chicken broth
1 cup whole milk or half-and-half
1½ cups shredded cheddar
1 cup shredded mozzarella
Salt & pepper, to taste
½ tsp Italian seasoning
Optional: ½ tsp paprika or mustard powder
Optional garnish: parsley, Parmesan, red pepper flakes
Season and sauté chicken in olive oil until golden and cooked through. Set aside.
In the same skillet, cook onion and garlic until soft.
Add pasta, broth, milk, seasoning, and bring to a simmer. Cover and cook 10–12 minutes.
Stir in cheese and cooked chicken. Mix until creamy and heated through.
Adjust seasoning, garnish as desired, and serve warm.
