A creamy, cheesy one-pot pasta dinner with tender chicken, melty cheese, and comforting flavor — perfect for family meals and easy weeknight cooking.

Ingredients

  • 1 lb chicken breast, cubed

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 23 garlic cloves, minced

  • 2 cups uncooked short pasta (penne, rotini, etc.)

  • 2 cups chicken broth

  • 1 cup whole milk or half-and-half

  • 1½ cups shredded cheddar

  • 1 cup shredded mozzarella

  • Salt & pepper, to taste

  • ½ tsp Italian seasoning

  • Optional: ½ tsp paprika or mustard powder

  • Optional garnish: parsley, Parmesan, red pepper flakes

Instructions

  • Season and sauté chicken in olive oil until golden and cooked through. Set aside.

  • In the same skillet, cook onion and garlic until soft.

  • Add pasta, broth, milk, seasoning, and bring to a simmer. Cover and cook 10–12 minutes.

  • Stir in cheese and cooked chicken. Mix until creamy and heated through.

  • Adjust seasoning, garnish as desired, and serve warm.
