Bourbon Chicken is a sweet-savory skillet dinner featuring tender chicken pieces coated in a glossy bourbon-infused glaze with garlic and ginger.
2 pounds boneless skinless chicken thighs cut into bite-sized pieces
1 tablespoon vegetable oil
3 cloves garlic minced
1 tablespoon fresh grated ginger
1/4 cup bourbon
1/3 cup low-sodium soy sauce
1/3 cup brown sugar
1/2 cup chicken broth
1 tablespoon rice vinegar
1 tablespoon cornstarch
2 tablespoons water
Sliced green onions for garnish optional
Pat chicken dry and cut into bite-sized pieces.
Heat oil in a skillet over medium-high heat.
Sear chicken 3 to 4 minutes per side until browned and cooked through. Remove and set aside.
Lower heat and sauté garlic and ginger for 30 seconds.
Carefully add bourbon and simmer 1 to 2 minutes.
Stir in soy sauce, brown sugar, chicken broth, and rice vinegar. Bring to a simmer.
Return chicken to pan and cook 5 minutes.
Mix cornstarch and water, then stir into sauce. Simmer until thickened.
Remove from heat and garnish with green onions before serving.
