Creamy, bold, and full of Cajun flavor, this chicken spaghetti brings Southern comfort to your plate with just one skillet and minimal effort.
1 lb boneless chicken breasts or thighs
2 tsp Cajun seasoning
8 oz spaghetti
1 tbsp olive oil
1 tbsp butter
½ small onion, diced
3 garlic cloves, minced
½ cup chicken broth
1 cup heavy cream
½ cup grated Parmesan
Salt and black pepper, to taste
Optional: 1 bell pepper (sliced), 1 cup spinach
Fresh parsley, for garnish
Season chicken with Cajun spice. Sear in olive oil until golden and cooked through. Set aside.
Cook spaghetti until al dente. Reserve ½ cup pasta water.
In same skillet, melt butter. Sauté onion until soft. Add garlic and optional bell pepper; cook until tender.
Deglaze pan with broth. Stir in cream and Parmesan. Simmer gently until smooth.
Add cooked spaghetti. Toss to coat. Loosen with pasta water if needed.
Slice chicken and return to pan. Heat through.
Garnish with parsley and serve warm.
