Creamy Cajun Chicken Spaghetti is a spicy, rich, and comforting pasta dish packed with bold flavor, seared chicken, and smoky Southern seasoning — perfect for quick weeknight dinners.
8 oz spaghetti
2 boneless, skinless chicken breasts
2 tbsp Cajun seasoning
Salt and pepper, to taste
2 tbsp olive oil or butter
1 small onion, diced
1 red bell pepper, sliced
1 green bell pepper, sliced
3 garlic cloves, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
Fresh parsley or scallions, chopped (for garnish)
Cook spaghetti in salted water until al dente. Reserve 1 cup pasta water and drain.
Slice chicken and toss with Cajun seasoning, salt, and pepper.
Sear chicken in oil over medium-high heat until golden and cooked through. Set aside.
In the same pan, sauté onion and bell peppers until softened. Add garlic and cook briefly.
Deglaze with broth, then stir in cream and simmer.
Add Parmesan and stir until sauce thickens. Return chicken and pasta to pan.
Toss everything to coat. Use reserved pasta water if needed to loosen sauce.
Serve hot, garnished with parsley or scallions.
