Creamy Cajun Chicken Spaghetti is a spicy, rich, and comforting pasta dish packed with bold flavor, seared chicken, and smoky Southern seasoning — perfect for quick weeknight dinners.

  • 8 oz spaghetti

  • 2 boneless, skinless chicken breasts

  • 2 tbsp Cajun seasoning

  • Salt and pepper, to taste

  • 2 tbsp olive oil or butter

  • 1 small onion, diced

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 3 garlic cloves, minced

  • 1/2 cup chicken broth

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • Fresh parsley or scallions, chopped (for garnish)

Instructions

  • Cook spaghetti in salted water until al dente. Reserve 1 cup pasta water and drain.

  • Slice chicken and toss with Cajun seasoning, salt, and pepper.

  • Sear chicken in oil over medium-high heat until golden and cooked through. Set aside.

  • In the same pan, sauté onion and bell peppers until softened. Add garlic and cook briefly.

  • Deglaze with broth, then stir in cream and simmer.

  • Add Parmesan and stir until sauce thickens. Return chicken and pasta to pan.

  • Toss everything to coat. Use reserved pasta water if needed to loosen sauce.

  • Serve hot, garnished with parsley or scallions.
