  • 12 oz smoked sausage (andouille or kielbasa), sliced

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 1 bell pepper, chopped

  • 2 ribs celery, diced

  • 3 garlic cloves, minced

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • ½ tsp dried thyme or oregano

  • Salt and pepper, to taste

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 (15-oz) can black beans, drained and rinsed

  • Optional: parsley, scallions, or lime for garnish

Instructions

  • In a large skillet or Dutch oven, heat olive oil over medium heat. Brown sausage slices, then remove and set aside.

  • In the same pan, sauté onion, bell pepper, celery, and garlic for 5–7 minutes until soft.

  • Stir in paprika, cumin, thyme, salt, and pepper. Cook 1 minute.

  • Add rice and broth. Stir to combine. Return sausage to the pot.

  • Bring to a boil, then reduce heat, cover, and simmer 15 minutes.

  • Add black beans. Cover and cook 5–7 minutes more.

  • Let rest, then fluff and garnish before serving.
