A comforting one-skillet meal of smoky sausage, tender black beans, and fluffy rice, seasoned with savory spices. A family-friendly classic perfect for busy nights or meal prep.
12 oz smoked sausage, sliced
1 cup long-grain white rice
1 small onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
1 (15 oz) can black beans, drained and rinsed
2 cups chicken broth
1 tsp cumin
1 tsp smoked paprika
½ tsp oregano
Salt & pepper to taste
1 tbsp olive oil
Optional: cilantro, lime, hot sauce for garnish
Heat oil in a skillet. Brown sausage for 5–7 minutes. Remove and set aside.
Sauté onion, pepper, and garlic in the same pan until soft.
Add rice and toast 1–2 minutes. Stir in spices.
Add broth, beans, and sausage. Bring to a simmer.
Cover and cook on low heat for 18–20 minutes, or until rice is tender.
Let rest 5 minutes. Fluff and garnish as desired.
