A bold, hearty one-pot meal, this black beans and rice with sausage recipe is packed with smoky flavor, fluffy rice, and savory sausage in every bite.

Ingredients

  • 12 oz smoked sausage (Andouille or Kielbasa), sliced

  • 1 tbsp olive oil

  • 1 onion, diced

  • 1 bell pepper, diced

  • 3 cloves garlic, minced

  • 1 tbsp tomato paste

  • 1 tsp cumin

  • ½ tsp paprika

  • ½ tsp oregano

  • ¼ tsp thyme

  • Pinch cayenne (optional)

  • 1 cup long grain white rice

  • 2 cups chicken broth

  • 1 (15 oz) can black beans, rinsed and drained

  • Salt and pepper to taste

  • Fresh parsley or cilantro for garnish

Instructions

  • Heat oil in a skillet. Brown sausage slices; remove and set aside.

  • Sauté onion, bell pepper, and garlic until soft. Stir in tomato paste and spices.

  • Add rice; toast for 1–2 minutes.

  • Add broth, beans, and sausage. Stir and bring to a simmer.

  • Cover, reduce heat, and simmer 18–20 minutes until rice is tender.

  • Let sit 5 minutes. Fluff, garnish, and serve hot.
