A flavorful twist on a classic grilled cheese — layered with melty cheese and vibrant basil pesto, grilled to crispy, golden perfection.
2 slices artisan bread (sourdough or ciabatta)
2–3 tablespoons shredded mozzarella
1–2 tablespoons sharp cheddar (optional)
1–2 tablespoons basil pesto
1 tablespoon butter or mayo (for outside of bread)
Spread butter or mayo on one side of each bread slice.
Flip and spread pesto on the inside.
Layer cheese evenly over pesto.
Close sandwich, buttered sides facing out.
Grill in skillet over medium-low heat, 3–4 minutes per side, until golden and melty.
Rest 1 minute before slicing and serving.
