A flavorful twist on a classic grilled cheese — layered with melty cheese and vibrant basil pesto, grilled to crispy, golden perfection.

Ingredients

  • 2 slices artisan bread (sourdough or ciabatta)

  • 23 tablespoons shredded mozzarella

  • 12 tablespoons sharp cheddar (optional)

  • 12 tablespoons basil pesto

  • 1 tablespoon butter or mayo (for outside of bread)

Instructions

  • Spread butter or mayo on one side of each bread slice.

  • Flip and spread pesto on the inside.

  • Layer cheese evenly over pesto.

  • Close sandwich, buttered sides facing out.

  • Grill in skillet over medium-low heat, 3–4 minutes per side, until golden and melty.

  • Rest 1 minute before slicing and serving.
