A bold and comforting Chicken Fajita Casserole loaded with peppers, onions, fajita seasoning, and cheese — baked to melty perfection and perfect for quick weeknight dinners.
1½ lbs boneless chicken breasts, sliced
3 bell peppers, sliced
1 large onion, sliced
2 tbsp olive oil
1½ tbsp fajita seasoning
½ cup sour cream or cream cheese (optional)
1½ cups shredded cheese (cheddar or Mexican blend)
Optional toppings: cilantro, avocado, salsa, lime
Preheat oven to 375°F.
Toss chicken, peppers, and onions with oil and fajita seasoning.
Spread in greased 9×13 baking dish. Add sour cream or cream cheese if using.
Bake uncovered for 25–30 minutes.
Sprinkle with cheese and bake another 5–8 minutes until melted.
Serve hot with toppings of choice.
