A bold and comforting Chicken Fajita Casserole loaded with peppers, onions, fajita seasoning, and cheese — baked to melty perfection and perfect for quick weeknight dinners.

  • lbs boneless chicken breasts, sliced

  • 3 bell peppers, sliced

  • 1 large onion, sliced

  • 2 tbsp olive oil

  • 1½ tbsp fajita seasoning

  • ½ cup sour cream or cream cheese (optional)

  • 1½ cups shredded cheese (cheddar or Mexican blend)

  • Optional toppings: cilantro, avocado, salsa, lime

Instructions

  • Preheat oven to 375°F.

  • Toss chicken, peppers, and onions with oil and fajita seasoning.

  • Spread in greased 9×13 baking dish. Add sour cream or cream cheese if using.

  • Bake uncovered for 25–30 minutes.

  • Sprinkle with cheese and bake another 5–8 minutes until melted.

  • Serve hot with toppings of choice.
