A quick and flavorful chicken fajita casserole with bell peppers, onions, spices, and melty cheese. Perfect for easy dinners and packed with protein.
1½ lbs sliced chicken breast or thighs
2 bell peppers, sliced
1 red onion, sliced
1 tbsp olive oil
1 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
Salt & pepper
1 cup shredded cheese
½ cup sour cream (optional)
1 cup cooked rice or pasta (optional)
Garnish: cilantro, lime wedges
Preheat oven to 375°F.
Sauté chicken in oil until lightly browned. Set aside.
Sauté peppers and onion until softened.
In a large bowl, mix chicken, veggies, spices, and optional sour cream or rice.
Transfer to a greased 9×13-inch dish. Top with cheese.
Bake uncovered for 20–25 minutes until bubbly.
Rest 5 minutes before serving. Garnish as desired.
