A quick and flavorful chicken fajita casserole with bell peppers, onions, spices, and melty cheese. Perfect for easy dinners and packed with protein.

Ingredients

  • lbs sliced chicken breast or thighs

  • 2 bell peppers, sliced

  • 1 red onion, sliced

  • 1 tbsp olive oil

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp garlic powder

  • Salt & pepper

  • 1 cup shredded cheese

  • ½ cup sour cream (optional)

  • 1 cup cooked rice or pasta (optional)

  • Garnish: cilantro, lime wedges

Instructions

  • Preheat oven to 375°F.

  • Sauté chicken in oil until lightly browned. Set aside.

  • Sauté peppers and onion until softened.

  • In a large bowl, mix chicken, veggies, spices, and optional sour cream or rice.

  • Transfer to a greased 9×13-inch dish. Top with cheese.

  • Bake uncovered for 20–25 minutes until bubbly.

  • Rest 5 minutes before serving. Garnish as desired.
