This Chicken Fajita Casserole is a cheesy, oven-baked Tex-Mex favorite with seasoned chicken, bell peppers, onions, and melty cheese. Easy, customizable, and ready in under 40 minutes.
1.5 lbs boneless skinless chicken breast or thighs, sliced
3 bell peppers (mixed colors), sliced
1 large onion, sliced
2 tbsp olive oil
1½ tsp chili powder
1 tsp smoked paprika
½ tsp cumin
1 tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
1½–2 cups shredded cheese (cheddar or Mexican blend)
Optional: cooked rice, beans, corn, or diced tomatoes
Preheat oven to 400°F. Grease a 9×13-inch baking dish.
Toss chicken, peppers, and onions with oil and spices.
Spread into dish and bake 20–25 minutes, until chicken is cooked.
Top with cheese and broil 3–5 minutes until melted and golden.
Rest 5 minutes. Serve with toppings or sides of choice.
